Grilled Zucchini with Delicious Italian Salsa

Ingredients

  • For Grilled zucchini:
  • 3 zucchini (peeled and sliced)
  • Salt as needed
  • Black pepper as needed
  • 1 tablespoon lemon juice
  • 1 tablespoon soy sauce
  • 1 tablespoon barbeque sauce
  • For Italian Salsa:
  • 1 small onion (finely chopped)
  • 1 tomato (finely chopped)
  • 2 tablespoon chopped fresh basil
  • 2 tablespoons finely chopped mint
  • 2 tablespoons olives (sliced)
  • ½ cup marinated artichokes (chopped)
  • Salt as needed
  • Black pepper as needed
  • 2 tablespoons lemon juice
  • 1 tablespoon Italian salad dressing
  • 1 teaspoon red pepper flakes
  • 1 teaspoon cumin powder
  • 2 to 3 garlic cloves (minced)
  • 1 teaspoon chili garlic sauce

Instructions

  • 1. Take sliced zucchini in a dish and add salt, black pepper, lemon juice, barbeque sauce and soy sauce. Mix well until nicely coated and incorporated then set aside.
  • 2. In the meanwhile, preheat your outdoor grill at medium high.
  • 3. Grill the zucchini at medium high for about 2 to 3 minutes or until properly cooked and grill marks appear. When ready, take out in a serving dish and set aside.
  • 4. Now for the spicy Italian salsa, take onion, chopped tomatoes, olives and artichokes in a bowl and mix well. Now take another bowl and add Italian dressing, salt, black pepper, lemon juice, basil, mint, garlic mince, red pepper flakes and chili garlic sauce and whisk properly until properly combined.
  • 5. Add this garlic mixture to the onion tomato mixture and mix with wooden spatula.
  • 6. Serve the Italian salsa with grilled zucchini and enjoy.
